Kristy Cardinal, 41, of Lander, Wyoming, is a wife, mother, business owner and emergency room nurse. In addition, she is training for a triathlon, skis, swims and works out regularly. Recently, Cardinal, along with her physician husband, decided to adopt a Vegan diet. Cardinal said it was after watching Forks over Knives, which referred to the Vegan diet as the "heart attack free diet," that she was converted. (Cardinal's mother died of a heart attack and/or other cardiac issues at the age of 41). It has been four months since going Vegan, and Cardinal has lost 25 pounds, has normal cholesterol and blood pressure levels, and an increased amount of energy.
